Taste of the Harvest
Joselyn Fallas 2026

Last year, to ensure the quality, La Chelita completed a full inspection of its equipment in preparation for the harvest. With this careful groundwork, we looked forward to this moment, and now, the new season has arrived.

This season, Joselyn presents a new selection crafted especially for you.

“I experimented with a process using yeast.”
“Yeast? Like the kind used for bread, beer, or wine?”

Yes, that very yeast.

Since last year, Joselyn has been exploring yeast fermentation in coffee processing. Much like in winemaking or brewing, fermentation plays a vital role in shaping flavor. By working with a specialized yeast partner, she carefully guided the process reducing unwanted bacteria while enhancing clarity and structure in the cup.

The result is a remarkably delicate coffee, with the clean elegance of a washed profile and subtle notes of red berries even it's natural process.

This is one of the earliest lots of the season, produced in exceptionally limited quantities. We are pleased to share it with our members.
