From Colombia - In the middle of November, I got a text:



"Sally, Fabian's latest processing is done."

We've all heard about Team Mikava's famous 'Carbonic Maceration' technique, known for bringing out floral and fruity flavors from coffee cherries.

– They've recently started sharing this method with their fellow farmers. –


Kevin encouraged Fabian to grow the Tabi variety, and last spring, we introduced his incredibly clean Tabi coffee—it's just been processed.

Now for our winter time, Fabian's back with an experimental Lot.

It's a Tabi Variety, Honey-processed with CM (Carbonic Maceration). Honey Processing involves peeling coffee cherries and processing them while still pulpy. Like the CM technique in the wine industry, this process brings floral and fruity flavors from the coffee cherries.

Fabian's coffee always boasts a clean and sweet taste. The added honey processing reminds of flavors reminiscent of winter - fruit compote or poached pear, perfect for the season.

I had the pleasure of meeting coffee producer ‘Paul Kevin Doyle’ at the coffee competition in Colombia. Mikava is one of esteemed winning farms at this competition called ’Cup of Excellence’.

Coffee and wine connoisseur Paul Doyle and his son Kevin found themselves steeped in inspiration and passion during a small trip to Colombia where they decided to buy a farm to grow and produce the most complex and flavorful coffee the world has ever known.

Coming from ‘wine country’ they experimented with a way to process their coffees by using a common wine process known as carbonic maceration that brings out the complexity, sweetness and florality in the fruit.

Kevin, Mikava Farm. “A little over two years ago my wife and I encouraged my father-in-law to grow Tabi.

We worked with my father-in-law in processing, upgrading their drying facility, and planting a special variety that has a really good cup along with good production. Tabi was the choice.”

And his name is ‘Fabian’.

After the 'Pre-order' period, we arrange international shipping via DHL from your coffee producers to your door. When coffee is ready from a coffee producer, it takes around 5-7 business days. 01. We started with the concept of buying exquisite ingredients from the farmers' market. You might have noticed that they don’t wrap unnecessary plastic packaging there.

02. We know how important coffee mood is. We especially love typography-oriented designs. We set our color board in black and white to highlight the color of the farm. While we love packaging design, we hate waste and single-use packaging more.

03. Therefore, we would like to serve coffee in a minimal paper box (with a valve attached to prevent oxidation and maintain quality) while reducing useless plastic packaging.

04. Also, we do not make unnecessary pamphlets and handouts. Hence, all you get will be quality coffee in a simple look functional bag and hand-written letters from the coffee producers.
