Part 4. Pacamara with Yeast and Pacamara without Yeast

“Is there something I need to taste one more time?”

That’s always what I think when I stand in front of Joselyn. She’s constantly trying something new, and each time, I can’t help but give in to my curiosity.

The tangerine brightness of the Arara variety, the cherry-jam sweetness of the returning Typica, the elegance of the Venecia that would make her father proud, though I’ve experienced countless coffees, Joselyn always brings out a new story.

“This time it’s Pacamara,” she says. “But even though it’s the same variety, I processed it in two completely different ways. The results are quite interesting.”

Pacamara is famous for its large size — its beans are far bigger than most other varieties. The last time I drank Pacamara is buried somewhere in the distant past, which only makes me more curious about Joselyn’s reinterpretation.

She began by harvesting the Pacamara cherries, then started fermentation using a carefully selected yeast to control harmful bacteria. Once fermentation was complete, the cherries were slowly dried in a dark room —shielded from light— to ensure perfect drying even in frequent rainy weather. After growing coffee cherries, the processing alone took over two months.

On the other side, she prepared Pacamara using the traditional natural method. This version leans more toward black tea with bright citrus notes — both coffees are exceptionally clean, without the typical intense natural profile, in the best way. Same variety, different processing — how would that difference appear on the palate?

From the first sip, Pacamara shows its presence with its characteristic weight and depth. Soon after, soft notes of tropical fruits like papaya, blueberry through. Thanks to Joselyn’s experiment, my taste buds set off on yet another adventure.

Each CeedSeries pouch starts with a name—the name of the person who grew the coffee. It’s a simple way to remind you that behind every cup, there’s a real story. The outer paper feels soft and natural, thoughtfully chosen to complement and frame the producers’ own packaging inside.

Inside, you’ll find the true package: one with a valve to preserve the coffee’s flavors, prepared by the producer themselves. Often, a handwritten note is included too. These small touches turn coffee into something more—an experience of connection.

Even the delivery box is part of that story. It changes slightly with each release, reflecting the nature of coffee itself. Even from the same farm, each harvest brings something new. These changing boxes quietly celebrate how coffee, like people, is always growing and evolving.
