Snow Veil — Fabian's 'Winter Honey' in Dream Coffee Cup 

 

Returning to Copenhagen from the vibrant streets of Milan, I found myself amidst a white snow landscape, a stark contrast to the autumnal views of Milan.

As winter came, I unpacked new coffee sample bags from producer ‘Fabian’, brewing a cup to start my morning routine. To my surprise, I noticed something unexpected

– I just realized that this cup is named ‘Snow Veil.’

I quickly texted 'Sunghye', the Ceramic artist,
asking,

“I’d love to know more about why you named this cup.”

Sally: “I'm suddenly curious about this name. Until now, I've only admired this cup's beauty."

Sunghye: “This cup was actually inspired by my dearly missed cat.”

Sally: “Your cat must have looked like a white snowflake…! I was so lucky to have stumbled upon your exhibition just two hours before it ended. This cup caught my eye instantly.”

Sunghye: “Really? I was so curious how you made it in the last hour of the last day!”

Sally: “Yes, I was so lucky. During that time, I had merely 10 days left in Seoul, so I decided to bring this cup back to Europe with me for my companion. This ceramic piece surpasses others I've used—it's resilient and perfect for daily use beyond being nice to look at.

And here I am, savoring «  Fabian’s Winter Honey » coffee in here.”

Sunghye: “What flavors does this cup of winter coffee hold?”

Sally: “It's crafted by a producer 'Fabian.' My coolest coffee friends from 'Team Mikava' recently began sharing their techniques with other farmers.

It's a Tabi Variety, Honey-processed with CM (Carbonic Maceration). Honey Processing involves peeling coffee cherries and processing them while still pulpy. Like the CM technique in the wine industry, this process brings floral and fruity flavors from the coffee cherries."

Sally: "Fabian's coffee always boasts a clean and sweet taste. The added honey processing reminds of flavors reminiscent of winter - fruit compote or poached pear, perfect for the season."

I had the pleasure of meeting coffee producer ‘Paul Kevin Doyle’ at the coffee competition in Colombia. Mikava is one of esteemed winning farms at this competition called ’Cup of Excellence’.

Coffee and wine connoisseur Paul Doyle and his son Kevin found themselves steeped in inspiration and passion during a small trip to Colombia where they decided to buy a farm to grow and produce the most complex and flavorful coffee the world has ever known.

Coming from ‘wine country’ they experimented with a way to process their coffees by using a common wine process known as carbonic maceration that brings out the complexity, sweetness and florality in the fruit.

Kevin, Mikava Farm. “A little over two years ago my wife and I encouraged my father-in-law to grow Tabi.

We worked with my father-in-law in processing, upgrading their drying facility, and planting a special variety that has a really good cup along with good production. Tabi was the choice.”

And his name is ‘Fabian’.

After the 'Pre-order' period, we arrange international shipping via DHL from your coffee producers to your door. When coffee is ready from a coffee producer, it takes around 5-7 business days. We guarantee our products to be free of manufacturing defects and will accept any defective item for refund or exchange. All returns must be made within 7 days of the e­mail confirming shipment. Other than defective products, not refundable. Thanks for your understanding of its food part.

01. We started with the concept of buying exquisite ingredients from the farmers' market. You might have noticed that they don’t wrap unnecessary plastic packaging there.

02. We know how important coffee mood is. We especially love typography-oriented designs. We set our color board in black and white to highlight the color of the farm. While we love packaging design, we hate waste and single-use packaging more.

03. Therefore, we would like to serve coffee in a minimal paper box (with a valve attached to prevent oxidation and maintain quality) while reducing useless plastic packaging.

04. Also, we do not make unnecessary pamphlets and handouts. Hence, all you get will be quality coffee in a simple look functional bag and hand-written letters from the coffee producers.
