Sardine Breakfast

Comfort breakfasts are linked to our memories of when we were little. My mum was obsessed with simple meals and organic foods. Those meals were not for a kid, so I was not happy about that. Turns now, my childhood memories are linked to my current organic obsession.

I eagerly started dreaming of a simple breakfast, a piece of sardine on sourdough, a slice of butter, and a cup of simple clean coffee from my favorite coffee producer. It gives various delicate flavors depending on which sardine, which butter, and which coffee we select.

Back to 10 months ago, when I was in Copenhagen to see my friend chef ‘Youra’, she selected this sardine for my Sardine morning dream without knowing. All other ingredients are certified organic. The cold-pressed oil is made with rapeseed from Danish and Swedish farmers and herbs from their small importer on the Isle of Funen.

5 months later after that breakfast, I got a lovely message from Rasmus and Martin in Copenhagen thanks to my other coffee friend ’S’. That was quite a coincidence moment. I met them in Copenhagen and then I could have the chance to see Martin again in Seoul. We shared the approach and vision for what we do. I especially love the point, they call their flavors from nordic water, beyond Denmark. How shining Martin's eyes were when he was talking about how beautiful the Nordic ocean was. I could see we do the same things, beyond Nordic Oceans and Coffee Forest. This breakfast brings me to somewhere between Nordic Oceans and Coffee Forest wherever I am.

Well, shall we have breakfast?
