“Is there something from this year’s experiments that I absolutely must try?”

In response, Joselyn introduced me to a variety with an elegant name: Venecia.

“Venecia is a Costa Rican variety,” she explained. “It is a natural mutation of Bourbon, and my father loves it. It is not the strongest against disease, but with care and love, it gives back so much.

Her words stayed with me for a long time. Every coffee undergoes fermentation, but when selective yeast is used well, the process becomes something more. True to its name, Venecia felt graceful, with soft floral notes and gentle hints of peach unfolding quietly in the cup.

The LALCAFÉ yeast called Intenso accelerates the removal of mucilage from the coffee cherry, prevents harmful bacteria, and allows the unique aromas of each variety to shine, especially delicate florals and fruits. The result is a smoother texture, a cleaner cup, and a more complex sensory experience.

I roasted it yesterday and tasted it today,” Joselyn added with a smile. “Honestly, it is very delicious.” I could only nod in agreement, without a doubt.
