Part 03. Venecia.

Joselyn told me that Venecia is a coffee variety from Costa Rica. I was instantly drawn to the name — it felt elegant and romantic. When I asked her if I needed anything to try her new experiment with selective yeast, she brought up 'Venecia'.

It’s a natural mutation of Bourbon. Joselyn said, “My dad loves it. It’s not the strongest against disease, but with care and love, it’s a variety that gives so much.” That stayed with me.

Fermentation happens in every coffee process, but with selective yeast, it becomes something more. A special yeast called LALCAFÉ INTENSO helps remove the sticky layer (mucilage) from the coffee faster and brings out the unique natural aromas of each variety. After years of global research, it was chosen for its ability to highlight fruity and floral notes, while also creating a smoother texture. This efficiency in 'demucilagination' leads to a more complex, high-quality sensory experience. It helps make the cup richer, cleaner, and more complex.

Venecia truly lives up to its name. With its soft floral aroma and delicate hint of apricot, it feels refined and romantic—just as I imagined.

And Joselyn? She was just as excited: “I roasted it yesterday and tasted it today. Honestly, it’s very delicious.”

I could only agree—no doubt.

Each CeedSeries pouch starts with a name—the name of the person who grew the coffee. It’s a simple way to remind you that behind every cup, there’s a real story. The outer paper feels soft and natural, thoughtfully chosen to complement and frame the producers’ own packaging inside.

Inside, you’ll find the true package: one with a valve to preserve the coffee’s flavors, prepared by the producer themselves. Often, a handwritten note is included too. These small touches turn coffee into something more—an experience of connection.

Even the delivery box is part of that story. It changes slightly with each release, reflecting the nature of coffee itself. Even from the same farm, each harvest brings something new. These changing boxes quietly celebrate how coffee, like people, is always growing and evolving.
