1. Fabian, ‘The First Washed’

I yelped when I received the message from Kevin, Mikava Farm. “A little over two years ago my wife and I encouraged my father-in-law to grow Tabi.”

More than happy to hear that. Because I would say ’Tabi’ is my favorite variety in Colombia. Even more, if it has been with 'Washed' processing.

“We worked with my father-in-law in processing, upgrading their drying facility, and planting a special variety that has a really good cup along with good production. Tabi was the choice.”

It’s a clean, balanced, sweet-washed Tabi with citrus characteristics.

And his name is ‘Fabian’.


2. Bright, Crisp, Green Tea notes come from ‘Double Washed’

For double-washed processing, It starts with rigorous hand-picking and selection of only the ripest cherries to achieve the highest sugar content aiding in the allowable fermentation time.


Team Mikava did a double fermentation in Cherry and then in the seed. We can call ‘Double Washed Anaerobic Fermentation’
1) Whole Coffee Cherries are fermented for 32 hours
2) Then additional 24 hours for seed, indoors in a low-temperature environment
3) Dried to 11% humidity on raised beds.
